This large batard is notable for its open fluffy crumb and rich oat flavor. The soft open structure comes from sprouted spelt since oats do not contain gluten. Sprouting of the grains (both the oats and spelt) increases the natural sugar within the grain, which benefits the fermenting process and dials back the sourness a bit.
